What is Sausage?
"Sausage" can have multiple meanings as there are many different types of "Sausage". For Wisconsin Fresh Gourmet Foods, the word "Sausage" is referring to "Summer Sausage" and " Sausage Sticks", "Snack Sticks" or "Beef Sticks" also "Meat Sticks", this all depends on what part of the country you came from.
Our Sausage is made of Farm Fresh Beef, Farm Fresh Pork, and a multitude of fresh vegetables depending on the flavor profile of sausage we are making. The Sausage "meat" is ground for easy mixing and texture. If we did not grind our sausage, we would have Jerky. Other Sausage companies sometimes use other ground meats like chicken and dried bread and certain grains in their sausage meat, usually as a filler or to extend the sausage. If you're eating a cheap snack stick, check your labels, it will have fillers to keep the product and price cheap. Wisconsin Fresh uses fresh vegetables in certain gourmet flavors of sausage.
When Wisconsin Fresh talks about sausage, this means our sausage will be encased in natural casings and as a finished product be longer and rounder in shape, not made into patties. The casings are what give sausage their longer shape and give us the ability to control the shape of our sausage for packaging. Our snack stick casings are natural and do not have to be removed before eating, like some other types of sausages. Summer Sausage Casings are just used to shape and cure Wisconsin Fresh Summer Sausage.
